The brewing process of Kombucha 

Making your Kombucha is easy, but it does take time. The brewing process for Kombucha can take anywhere from 3 days to 3 weeks, depending on the tea you use and how often you brew. 

To make Kombucha, you will need to start by making a SCOBY. This symbiotic culture of bacteria and yeast will turn your sweet tea into Kombucha. The process takes several days, but you will need to do it in stages: 

1. Clean the equipment and sterilize it by washing it in hot water and soap. 

2. Make a sweet tea with an honest-to-goodness gallon jug full of white sugar water (about 1/2 cup sugar per 8 ounces of water). Boil this down to about 150 degrees Fahrenheit (67 C) so that all the sugar is dissolved. 

3. Pour this hot mixture over a clean kitchen towel, then hang it up overnight to cool down completely (it should feel room temperature by morning). 

4. Pour any remaining liquid from the jar or container used to store your cooled sweet tea, and put whatever’s left into another container for now (I like using old yogurt containers or glass jars with plastic lids). Set aside at room temperature until it’s time to use it later.
